A freeze dryer, or lyophilizer, removes water from materials to preserve them. It works in three main stages. First, the material is frozen solid. Then, under a vacuum, low heat is applied, causing the frozen water to sublimate (turn directly from ice into vapor) in a step called primary drying. Finally, secondary drying uses slightly higher heat to remove any remaining bound water molecules. This process preserves the material's structure and extends its shelf life significantly .
